There are three brisket sandwiches on the board, plus a Three Meat sandwich that includes brisket. The chopped and sliced versions cost the same. The XXL is chopped only.

Which Size Is the Best Value?
Price per ounce makes the choice easy. The XXL costs $5.17 more than a regular sandwich but gives you 5 more ounces of meat and bun, so each ounce is cheaper.

The Three Meat sandwich is the cheapest per ounce on the BBQ board at about $1.00. If you are feeding one very hungry person, it beats the XXL on value. If you only want brisket, the XXL is the better deal than buying a regular sandwich, and two regular sandwiches ($19.54 for 16 oz) cost $4.60 more than one XXL for only 3 more ounces.

Splitting one XXL between two light eaters costs about $7.47 each, which is cheaper than two regular sandwiches.
Chopped vs Sliced: Which Should You Order?
Both cost $9.77, so the choice is only about texture and fat.
Chopped
Chopped brisket mixes lean and fatty meat. It is cut fine and stirred together with a tangy, sweet and smoky barbecue sauce before it goes on the bun. This is the version most people mean when they talk about the Buc-ee’s brisket sandwich, and it is the only style for the XXL.
Sliced
Sliced brisket uses the leaner flat, cut against the grain and laid on a soft bun with the house barbecue sauce. It is less saucy and a little cleaner to eat in the car. Pick it if you like to taste the smoke and pepper on the meat.

How Buc-ee’s Brisket Is Made
The brisket is smoked before it reaches the store. Buc-ee’s smokes whole briskets for about 12 to 14 hours at a central facility, then ships them to the travel centers. The location of that facility is not public.
The cut
Brisket comes from the cow’s upper chest and has two muscles. The point is fattier and has more flavor. The flat is leaner. Buc-ee’s uses both.
The seasoning
Mostly salt and pepper, plus a spice blend. It is a Texas style rub, which keeps the beef flavor up front.
The carving
At the store, staff split the point from the flat, trim some of the fat and leave some for flavor, then slice against the grain or chop it.
The call
When a fresh brisket hits the cutting board, the carver shouts “Fresh brisket on the board!” and the rest of the crew shouts it back.
The pitmaster
Buc-ee’s barbecue program is led by Randy Pauly, a Texas pitmaster with several world championship titles who also competed on Food Network’s Chopped Grill Masters.

How the Brisket Sandwich Price Has Changed
The sandwich has gone up about 15% since the XXL launched in 2023. Both sizes rose by almost the same percent.

When the XXL first came out at the New Braunfels store, some customers were upset about the jump to $12.99. Buc-ee’s said the XXL has nearly double the brisket of the standard sandwich.

Buying Brisket by the Pound
You can also buy brisket without the bun. In late 2024 the reported price was $22 per pound for chopped and $26 per pound for sliced. Whole briskets are sold too, priced by weight, so a 9 lb brisket costs much less than a 13 lb one.

Ounce for ounce, the sandwiches are cheaper than meat by the pound, even though they include the bun and sauce. Pound prices are from 2024 and are probably higher now, so ask at the counter.

When You Can Get a Brisket Sandwich 11:30 AM to after midnight
Buc-ee’s FAQ says BBQ sandwiches are served from 11:30 AM until after midnight. Breakfast runs from 4:00 AM to 10:30 AM, and the kitchen changes over between 10:30 and 11:30 AM. If you arrive at 10:45 AM, you will probably wait or see a thin board.
Before 10:30 AM, the way to get brisket is the Brisket Egg Taco, which uses the same brisket with scrambled egg in a flour tortilla.

How to Order Without the Wait

- When you hear “Fresh brisket on the board!”, a new brisket has just been cut. That is the freshest meat you can get.
- Buc-ee’s has no online ordering and no advance orders, so you cannot call ahead for a large group. The FAQ says stores are set up to handle big groups on the spot.
- Pair it with Beaver Chips ($3.44 for 3 oz), which are made on site.
