About these prices: Buc-ee’s does not publish a menu or price list online. Prices here are the most common listed prices we found in October 2026. Your store can be a little higher or lower, and not every item is stocked at every location.
Buc-ee’s BBQ Hours 11:30 AM to after midnight
Buc-ee’s FAQ says BBQ sandwiches are available from 11:30 AM until after midnight. Before that the hot case is on breakfast (4:00 to 10:30 AM) and then a one-hour changeover.
Brisket shows up at breakfast too, in the Brisket Egg Taco ($6.89). Brisket sandwiches aren’t sold before 10:30 AM.

Brisket Sandwiches
There are 3 brisket sandwiches. The sliced one uses the leaner flat of the brisket on a soft bun with BBQ sauce. The chopped one mixes lean and fatty meat, chops it fine and stirs in a sweet, tangy, smoky sauce.
The Big Buckin’ Brisket XXL is chopped brisket at 13 oz. Buc-ee’s says it has nearly double the meat of the regular sandwich.

How Buc-ee’s Brisket Is Made
Buc-ee’s BBQ is run by pitmaster Randy Pauly, a Texas native with multiple world championship titles who also competed on Food Network’s ‘Chopped Grill Masters’.
The briskets are seasoned mainly with salt and pepper plus a spice blend, then smoked low and slow for 12 to 14 hours. The smoking happens at a central facility, and whole briskets are shipped to the stores daily.
- At the store, carvers separate the point (fattier) from the flat (leaner).
- They trim some fat and leave some in for flavor.
- Meat is sliced against the grain or chopped and mixed with sauce.
- Carvers wear cowboy hats and work in full view of the line.

How to Order at the Brisket Board
The brisket board is a separate counter from the grab-and-go hot case. Here’s how a stop usually goes, and where people slow the line down.
- Pick chopped or sliced before you reach the front. That’s the main question the carver will ask for a brisket sandwich.
- Watch for ‘Fresh brisket on the board!’ When a new brisket is cut, the call goes out. That’s the freshest meat of the hour.
- Ordering in bulk? Say how many pounds and whether you want it chopped or sliced. Ask the price per pound, since it can change by store.
- Long line? Shop the cold case or the snack aisles while one person waits at the board.
- Pay at any register. Add sides, drinks and snacks on the way.
Buc-ee’s doesn’t take advance orders, according to its FAQ. For a big group, send one person to the board with the full order written down and let everyone else shop.

Pro Tip
The Three Meat Sandwich is the best value BBQ item at about $1.00 per ounce. The Brisket Taco costs twice as much per ounce as the brisket sandwich, so skip it unless you want a small bite.
Buying Brisket by the Pound
You can also buy brisket in bulk at the board. In late 2024, chopped brisket was reported at $22 per pound and sliced brisket at $26 per pound. Whole briskets are sold too, priced by weight.
Those are older reported prices. Ask at the board for today’s price before you order a big tray.

How BBQ Prices Have Changed
Buc-ee’s BBQ has gone up in price like everything else. The XXL launched in 2023 at the New Braunfels, Texas store for $12.99, and news reports at the time put the regular brisket sandwich at $8.49. Some customers remember the regular sandwich at $6.99 before that.
